Herbs and spices are dietary components that are commonly used in traditional medicinal systems around the world. Beyond culinary use, they have also been used to treat a wide array of medical conditions for centuries. Increasingly, scientific studies are revealing the potential for herbs and spices to exert significant antioxidant effects, as well as other health benefits, in the human body. Insufficient levels of antioxidants such as vitamins C and E in the body increase the risk of oxidative stress, which is associated with a wide range of conditions, including aging, cognitive impairment, and disease. Antioxidant-rich herbs and spices may help protect the body by neutralizing free radicals, which are unstable compounds that cause cell damage. Perhaps the most potent antioxidant compounds in herbs and spices are polyphenols. These are mainly found in spices such as cloves, cinnamon, celery seed, cumin, and ginger, as well as herbs including basil, oregano, thyme, and rosemary.
